Day Fourteen of #30dayscleansingchallenge
I can’t believe two weeks are already over! My body is getting into the rhythm of cleansing. I was not strict with myself though. I let my body decide and adjust as that will result in an effective and a prolonged healthy diet. Sudden onset of an extreme deprivation will only make the system crave for what is being missed. So, it is advisable to take changes slow and steady. Hope it works out for you too. Moving on to todays post. I ate a big sunflower! :) Wait, did i say sunflower? I meant a big salad. Well, you can also call it a sunflower salad (because it looks like it).
What is in it?
Lettuce
Carrots
Cucumbers
Onion
Tomatoes
Capsicum
Green lentils (mung beans)
This is somewhat similar to the previous chickpeas salad I made. But this time the protein bombs are the green lentils. I boiled some and added to the salad to make it filling and extra nourishing.
Nutri facts:
28 grams of mung beans’ protein equivalent to 1 hardboiled egg or 28 grams of chicken.
Good source of dietary fiber (helps to lower cholesterol, prevents constipation and keeps you feeling full)
Rich in Vitamin A, Vitamin B (Thiamin, Riboflavin, Folic Acid, Niacin, Vitamin B6, Pantothenic Acid) Vitamin E, Vitamin D, Vitamin C, Vitamin K.
Contains Minerals like Calcium, Potassium, Iron, Magnesium, Phosphorous, Zinc, Copper and Manganese.
Low on the glycemic index at 25 and have a low glycemic load of 4 making them a smart food choice for diabetics. Diabetics can safely eat Green Mung Beans. The low glycemic index, fiber and protein help to regulate blood sugar.
Contains skin anti-aging properties that stimulate the production of hyaluronic acid, collagen, and elastin, all essential to younger healthier skin.
Easily digestible
Anti-inflammatory (can reduce inflammation)
Contains oligosaccharides to prevent gas and bloating, unlike other beans
Contains high amounts of fiber, thereby preventing constipation
One of the few tridoshic foods in Ayurvedic diets that can be eaten to balance all three dosha’s (energetic forces) in the body.
Regulates hormones after menopause, relieve hot flashes, and prevent osteoporosis.
Apart from doing good for the body, green lentils help in nitrogen fixation in the soil for farming. They are very ancient and are powerful source of energy that we should not forget to consume. With excellent protein sources in the plant kingdom, no humans need to destroy any other animal and hurt the planet in the process. Be green, like the mung bean ;)
