Today was awesome because I am very happy and also Herbi broke his ankle (actually tore his muscles) during a volley ball match. So we did not go out to do any useful (read as 'useless') work, instead I visited him at his place and collabed with his mother and prepare amazing food for us! (This is the happiest part) :D Idiyapam with coconut milk and Paal Kolakattai. These are ancient south indian cuisine that are oil-free, gluten-free, cholesterol-free, all natural and very easy to make! I will put a series of pictures for better understanding. If you already are familiar with this, then just enjoy reading. You can have these for breakfast, lunch, diner or anytime of the day!
There are only three ingredients: rice flour, jaggery and coconuts; and three equipments: a steamer, Idiyapam press and the pans. See what wonders can be made with just these!
First of all, keep some water boiling on stove.
Have a large bowl with required amount of rice flour ready.
Add boiling water little at a time and stir with spoon to combine into a tough dough.
Adjust flour and water accordingly to make a nice roti like dough.
Form a log with a handful of dough and push into the cavity of the idiyapam maker.
Press to bring out the dough into thin strings onto the cloth of the idiyapam pans.
Repeat until all dough is over and also do the same with Ragi flour or any millets flour.
Now the pans go into the steamer for 5mins and its done!
Serve with freshly grated coconuts and coconut milk with jaggery
We had some leftover rice flour and then decided to make some Paal kolakaatai.
Keep water boiling on stove.
Form tiny balls with the rice dough.
Drop them into the boiling water for few mins until they are cooked well.
Then boil some coconut milk with jaggery separately.
Drop the cooked rice balls into this and let sit for sometime.
Stir in some freshly grated coconuts.
Voila! Dessert is ready.
How cool is it to just use three ingredients to make a whole meal and a dessert! I am blown away! This is why I love south indian cuisine. They can be as complicated as possible or straight and easy like this. Knock yourself out this weekend and explore endless possibilities in life and food. Let there be peace.
