I am grateful to share my birthday with World Water Day. Yes, it is my bday! Yaaay! :D It has been 23 years on this planet, and I have inherited knowledge and life from nature in various phenomena. Well, It is my birthday! We have enough reason to celebrate and devour unhealthy cakes :P But I did not do that. I was true to myself and my body and decided to do a healthy birthday cake for myself. I know it is unusual of a b'day girl to do her own cake but I know of no one in this city who is that conscious of health while baking. As an expert myself (proud moment :P ) I wanted to hunt what all I can find in this hot place where summer is already scorching! All we need is something cold. Something that slides down our mouth— cool, creamy and sweet at the same time. Well, It might be ice-cream. Oh! A no-bake decadent healthy delicious ice-cream layered cake! Yes, that is it.
So, what all did I forage?
Mangoes (ripe, sweet, and juicy)
Tender coconut meat (fresh)
Cashews (soaked overnight)
Dates (de-seeded)
Rolled oats
Walnuts
Cocoa powder
Pysillium husk (magic ingredient that binds everything)
Tools for the trade:
A strong blender
Springform pan (otherwise it is difficult to remove as a whole)
Tart pan (with removable base)
Now, how to do this? (I can’t give u measurements as I did not measure them myself)
Crust:
Process walnuts, rolled oats and dates together in blender to form a dough.
Press into the pans’ bottom and sides.
Leave in fridge for sometime to harden.
Mango layer:
Wash, peel and scoop out the pulp of this golden beauty.
Blend with cashews and pysillium husk.
Put this creamy mixture into the pans on the crust and level it.
Leave back into the fridge for sometime.
Coconut layer:
Blend fresh tender coconut meat with cashews.
Scoop this mixture onto the mango layer and let sit in fridge.
Chocolate layer:
Blend cashews, pysillium husk, few dates and cocoa powder.
Apply this on top as final layer and leave in fridge for a long time (4 hrs minimum).
Sprinkle some desiccated coconut and/or choice chips (not so healthy, but is b’day!)
To remove the pans, they need to be set very well.
Carefully open the lock of the springform and slide down to reveal this gorgeousness.
Do the same with the tart pan (slide down).
Time to devour!
Well, we had no patience so removed the tart while still not set :P It is all sloppy now.
Finally, the bday cake disclosed :D This is a very nutritious and filling cake, as you can see the natural ingredients in it. There is no need of baking or cooking here, but needs lot of time to set and totally worth it. Surprise someone with this bounty and make summer cool! Oh, and don’t forget to be kind ;)
