Day One of #30dayscleansingchallenge

This is Day One, and I am so exited already! With all the energy, I made some soy curd last night. As I was munching on some fresh coconut meat after sipping some tender coconut water today morning, I wondered what would it be like if I combine that with the curd.


Voila! Strawberry Coconut Soy yogurt Chia Pudding - named after all the ingredients :P



So how does this work?


Chia seeds:

  • 3 to 5 times more calcium than milk

  • 8 times more omega3 than salmon

  • controls sugar cravings and aids weight loss


Soy yogurt

  • non-pasteurised (when home made)

  • free from lactose

  • no cholesterol

  • live probiotic culture for gut health

  • high levels of protein


Coconut meat

  • contains fat that is medium-chain triglycerides (MCTs)

[The MCTs in coconut are converted into ketone bodies which show potential as a replacement energy substrate for the brain. Eating MCTs from coconut products like coconut meat may then help increase the body’s ketone levels, potentially offering a dietary therapy approach to alleviating the symptoms and possibly even preventing the onset of neurological diseases. Eating coconut meat appears to protect against heart disease and stroke as well. As it turns out, coconut meat’s measurable vitamins A and E, and polyphenols and phytosterols, all work together to decrease the levels of LDL cholesterol, which are fats that stay in the blood and in skin tissues and high levels of which have been found a risk factor for cardiovascular diseases.]

The pudding is made by simply combining the curd, strawberries and coconut meat in a blender to make a purée; stirring in a couple of spoons of Chia seeds and letting it set for 3 hours. The texture is thick creamy with some hints of sweetness from the berries and meat. I used the leftover strawberries from winter. You could vamp it up with other fruits of your choice too! One could make this ahead to pack as snack to work/school. This kept me feelng full for a long time and diminished my cravings.
